To kick off 2020, we (I mean me, since I’m the only one who cooks in our household) have been doing one meatless meal a week. A true crowd pleaser was a hearty veggie fried cauliflower rice drizzled with a yummy spicy mayo and topped with a veggie spring rolls cooked in the air fryer!!
Ingredients:
- 4 cups riced cauliflower
- 1/2 cup diced onions
- 3/4 cup diced carrots
- 1/2 cup diced celery
- 2 cups shelled edamame
- 1/2 bean sprouts
- 6 garlic cloves, minced
- 3/4 cup low sodium soy sauce
- 2 TBSP dark sesame oil
- 2 TSP garlic powder
- 1/2 TSP black pepper
- 1/2 cup avocado mayo (we 💗 Primal Kitchen’s)
- 1/4 sriracha sauce
Directions:
- Heat sesame oil in large pan. Once heated, add the onions, carrots, celery and garlic. Cook until translucent.
- Add riced cauliflower, garlic powder, pepper and soy sauce. Cook for 10 minutes.
- Meanwhile, in a small bowl mix the avocado mayo and sriracha sauce. Once combined, pour into a small zip lock. Cut of tip to be able to drizzle on finished dish.
- Add edamame and bean sprouts, cook for another 5 minutes.
- Add serving to bowl and top with a drizzle of spicy mayo and a vegetable spring roll. Bon Appetite!!
