For as long as I can remember, my momma and my aunts have been making homemade ice cream cakes to celebrate the holidays (as in any holiday, even the made up ones). Ice cream cakes are great for large crowds, multi day gatherings and to just have a yummy dessert on hand when your sweet tooth calls.
One of the beauties of this recipe and you can add or switch out some of the ingredients to make it your perfect cake! For my hubby, we add in melted peanut butter and crushed Oreo cookies. (YUM!)
- 8-10 ice cream sandwiches
- 1 container of vanilla bean ice cream softened
- 1 container of chocolate fudge cake icing
- 3 cups chopped peanuts, split
- 8oz heavy whipping cream
- 1/4 confectioners sugar
- 1/2 vanilla bean or 2 tbsp vanilla extract
Directions:
- Make homemade whipped cream by combining the heavy whipping cream, powder sugar and vanilla. Use a hand blender to blend until fluffy
- In a 9×11 freezer safe dish, line the bottom with the ice cream sandwiches.
- Add half the container of ice cream and smooth over the sandwiches.
- Take 1.5 cups of the chopped peanuts and make a layer over the ice cream. Then add a layer of the fudge icing.
- Add the other half of the ice cream, smooth over.
- Take your homemade whipped cream and spread it evenly over the top and then sprinkle the rest of the peanuts.
- Cover the dish and place in freezer for at least 3 hours. Cut and serve! Bon Appetite!
