Who loves Mexican food!?! This girl does (and so does the whole family!)! I am always thinking of how to create healthier Mexican dishes with simple ingredients. This stuffed pepper recipes hits just the spot!
Ingredients:
Step 1: Core the bell peppers to remove the stems and seeds.
Step 2: Mix the black beans, rice, onions, salsa and 1/4 cup shredded cheese.
Step 3: Stuff the peppers with the filling and top with the additional shredded cheese. Place in a 350 degree oven for 25-30 minutes
Step 4: Remove from oven and top with your favorite toppings–sour cream, jalapeño slices, avocado.
