This is a great one pan meal that the whole family will love and you will especially love because its load with tons of nutrient dense vegetables. The main star of the dish is cabbage which is sliced super thin and cooked to perfection.
Tips:
- Cutting the Cabbage: the key to the cabbage in this meal is to cut it very thin. First cut the stem end off the cabbage. Then cut it in half from the top down through the stem. Next, you want to quarter each cabbage by placing the flat, cut side against the surface of the cutting board and quartering them from top to stem. Turn each quarter crosswise and cut into thin 1/4 inch or smaller strips.
- The Meat: you can use quite a few different meats options in this meal, I always just grab for what I have on hand that day. My favorite is to take chicken breasts and slice them very very thin, put them in a large ziplock and marinade them. You could also use ground chicken, pork tenderloin sliced thin, ground pork or ground turkey.
Ingredients:
For the meat marinade–>
- 2 tbsp sesame oil
- 3 garlic cloves, mined
- 2 scallions, sliced thin
- 1/4 tsp red pepper flakes
- 1/4 tsp ground ginger
- 1 tbsp soy sauce
- 2 tbsp rice vinegar
For the meal–>
- 1 lb meat of choice, I like to used chicken breast sliced very thin
- 1 small cabbage
- 2 cups shredded carrots
- 1/2 red bell pepper sliced thin
- 3 stems of scallions, sliced thin
- 2 tbsp garlic, minced
- 1 tsp ground ginger
- 4 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
Directions:
- In a large ziplock bag add your meat and all the ingredients for the marinade. Place in fridge for at least 20 minutes before cooking.
- In a small bowl, combine the garlic, ginger, honey and soy sauce. Place to the side to add to dish later.
- Cut the cabbage very thin into 1/4 inch strips. See Tips section above. Then slice the bell pepper and scallions.
4. In a large pan, heat oil. Dump the entire contents of the marinade bag with the meat into the pan. Cook until chicken is cooked all the way through, about 6-8 minutes.
5. Remove the chicken from the pan and place eon dish. Add all the veggies to the pan except for the scallions , mix well and sauce for about 2 minutes. Then add the bowl we set to the side earlier. Cook until veggie start to get tender, about 5 minutes.
6. Add the chicken and almost all of the scallions (save some to top the dish) in to the pan. Mix well and cook for about 2 minutes.
7. Time to plate! Add ingredients to a bowl and top with some of the scallions you left to the side and some black sesame seeds. Bon Appetite!
