Memorial Day weekend is fast approaching so I put together a list of some of my favorite beach/pool essentials, recipes & decor items to celebrate this amazing country of ours and to give tribute to those who gave their lives for us to live free.

FAVORITE RECIPES

Bunless Bison Burgers

(makes 4 patties)

Ingredients

  • 1lb ground bison
  • 2 tbsp bbq sauce
  • 1 tbsp Worcestershire sauce
  • 1 egg yolk
  • 1/4 cup bread crumbs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried onions
  • 4 slices mild cheddar cheese
  • Optional: lettuce, tomato, onion, avocado for toppings

Directions:

  1. In a large bowl hand mix the ground bison, bbq sauce, Worcestershire sauce, egg yolk, bread crumbs and spices into a bowl. Do not overwork the meat.
  2. Split the meat into 4 equal sized pieces. Form into patties.
  3. Heat up grill and cook on medium heat, about 5-7 minutes per side (to desired doneness). Place cheese slice on each patty once you flip.
  4. Serve with all your favorite toppings.

Summer Salad

(serves 4)

Ingredients

  • 3 large cucumbers diced
  • 1 pint cherry tomatoes, sliced in half
  • 4 ears of corn (or 1 can of corn)
  • 1/4 cup red onion, diced
  • 1 avocado, diced
  • 1/4 cup feta cheese crumbles
  • 1/4 cup EVOO (extra virgin olive oil)
  • 3 tbsp red wine vinegar
  • salt and pepper to taste

Directions

  1. Put all ingredients in a large bowl and mix well. Let sit for 15 minutes in the fridge before serving.
