I love a super fast meal to be able to pull it out on those nights when I barely make it home by dinnertime which means pretty much zero time to cook it. So thankful for the quick and easy recipe that my whole family loves!
Meat–I love using ground pork in this recipe as it is tender but full of flavor; however you could switch out the ground pork and use ground beef, ground chicken or ground turkey.
Rice–I highly suggest usually sushi rice as the texture pairs perfectly for this dish. But if you are in a super crunch for time you can grab one of those organic rice bags that you pop in the microwave for 3 minutes.
Oil–here is one ingredient I would not modify as the sesame oil (toasted or not) adds so much flavor to the dish
Ingredients
- 1 lb ground pork
- 2 large zucchinis, chopped into bit size pieces (skin left on)
- 5 garlic cloves, minced
- 1/2 white onion, minced
- 1/2 cup soy sauce
- 2 tablespoon toasted sesame oil
- 1/2 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 tsp salt
- pinch of red pepper flakes (add more if you like your dishes spicy)
- black sesame seeds to top your dish with
- 2 cups cooked sushi rice (1/2 c serving per person)
Directions:
- In a large skillet, heat up the sesame oil. Once heated, add the onion, garlic and zucchini. Cook until onions are translucent.
- Then make a well in the center of the pan, add in the ground pork. Add all the seasonings–salt, pepper, ginger, garlic powder & red pepper flakes. Break up the meat as it cook.
- Once the meat is brown, add the soy sauce and give the whole dish a good stir.
- Let the dish to incorporate for about 2-3 minutes then serve over 1/2 cup of cooked sushi rice. Top with sesame seeds. Bon Appetite!
