Wowzers this recipe is so so so yum and makes quite the statement with it’s beautifully wrapped setup topped with some fresh peach slices! You will want to use fresh peaches for this recipe.
Ingredients:
3 peaches, skin removed and diced into small chunks (slice a few pretty slices for topping)
2 tbsp dark brown sugar
4 basil leaves, minced (reserve some to put as topping)
1 tsp lemon juice
pinch of red pepper flakes
1/2 tsp salt
1/2 tsp black pepper
puff pastry sheet
flour to roll out puff pastry sheet
1 tbsp melted butter
wheel of brie
Directions:
In a bowl mix up the diced peaches, basil, sugar, lemon juice, red pepper flakes, salt and pepper.
Roll out the puff pastry into a large square and add your wheels of brie to the center then top with the peach mixture.
Fold the puff pastry around the brie and peaches then top with melted butter and your pretty peach slices and and just a bit of basil pieces. Place in oven safe baking dish.
In a 350 degree F oven add the dish and cook for about 30-35 minutes until browned.
