Let me start with saying I am NOT a big fan of casseroles usually as I always associate casseroles with that “gross one” your great aunt made every holiday for 30 years lol. BUT I do have a paleo taco casserole dish that I used to make a ton which my family loved so this is a keto version of that but with a buffalo sauce twist AND it was a big hit with the little ladies and adults.
For the meat: I used normal grass fed organic ground beef but I definitely think you could use almost any ground meat — bison, chicken, turkey etc.
For the veggies: You can’t really taste them all that much so it is a big win for making for kids as they get the benefits without you hearing them complain about the taste. I only used onions and orange bell peppers BUT you could also sneak zucchini in here easily just finely chop the pieces and cook at the same time as the other veggies.
