If you have been following my journey for awhile you know I started keto in hopes to helping with my inflammation and overall gut health and planned on only doing it for 2 weeks. Well I felt so good that I have kept up with it for months — inflammation reduced, gut health on point, tons of energy and I also lost 11 pounds.
After sharing my journey with you last month I had an overwhelming amount of questions and requests to see what I typically eat in a day so here we are, I’m sharing a bit of how that day looks with the recipes and shopping links to keto musts.
Coffee
If you know me, then you know I could never give up my coffee. Making this delicious creamer is the perfect way to still enjoy a yummy cup.

Also for added health benefits and to kick off the day with good fats I do add 1 tsp of organic ghee and 1 tsp of coconut oil to my cup of Joe as well.
Breakfast – Keto Breakfast Scramble
I love eggs and bacon for breakfast so a keto breakfast was maybe the easiest thing for me as I transitioned over to this way of life. I love making eggs with olive oil and fresh garlic then topping with cheese OR this great egg scramble.
Lunch – Keto SMASH Burgers
I make these keto burgers at least 1 time a week if not more. It’s one of my favorite dishes. Now if you don’t have time to make the burger patties yourself don’t worry as you can just buy some premade patties and add salt, pepper and garlic powder to each side before cooking.

Snack Time
To the right are some of my favorite keto snacks — those pepperoni roll ups have been a game changer when I am home starving and need something yummy immediately.
The Keto Bars are also good for a quick and easy breakfast when you need to get out the door in the morning.
For a quick fat boost, I always grab some grass fed, organic, salted butter!

Dinner – Oven Roasted Chicken Thighs
I made these chicken thighs last night and they were a huge hit even with my girls. I served them with green beans cooked in coconut oil and fresh garlic.

If you are salad lover like myself, I love my Creamy Caesar Salad Dressing (click HERE for recipe) with slice filet.
A few other fun dinner ideas: Chicken Parmesan (instead of bread crumbs just sprinkle a little bit of almond flour), Meatballs in Sauce (I use parmesan in them to make them stay moist) and Mussels in a white wine sauce with a delicious side salad.
Dessert
If you are a chocolate lover, you will LOVE these chocolate bark squares. They truly satisfy that sweet tooth. Click HERE for the chocolate.
My hubby’s favorite thing to do is to take a spoonful of the almond butter, sprinkle with cinnamon and add the chocolate square. He says it unreal lol
