The hubby has a big sweet tooth!! Over the years I have constantly tried to come up with better for you desserts that not only satisfy his sweet tooth but also don’t add 20 lbs just by taking 1 bite. This weekend I decided to create some paleo friendly dessert bars using all natural ingredients and a ton of love. This layered bar really hit to spot for a little treat after dinner.
Ingredients:
For the base—>
1 cup pistachios, shelled
8 dates, seeds removed
1 tsp cinnamon
For the filling—>
1 cup cooked cashews (soak 1 hour in boiling water)
1/4 cup coconut oil
1/4 cup honey
1/2 lemon, juiced
For topping—>
2 cups raspberries & blueberries
1/3 cup water
Directions:
Throw all ingredients for the base into a food processor and pulse until pistachios are finely chopped. Press everything into a freezer safe rectangular dish (8×8 works) & put in freezer for 10 minutes.
Add all ingredients for filling into food processor and pulse until smooth. Spread a layer over the base evenly. Put back into the freezer for 5-10 minutes.
Place the berries and water into a small saucepan and boil. Let the berries cook down until it’s made into a jam (about 10 minutes). Then let cool.
Once the jam is cooled, spread it evenly over bars. Put it back into the freezer for about 5-10 minutes. Then cut into squares, top with some crumbled pistachios and serve!
