For as long as I can remember, my mom has been making steamed artichokes and they get eaten to the last drop. As a kid (and now still as an adult), I get giddy when I am almost to the heart of the artichoke. There is nothing better than artichoke hearts in my opinion–dip in a butter and its true perfection!
The holidays is a great time to get your guests loving this somewhat labor intensive vegetable by impressing them with these garlic and parmesan stuffed artichokes. Trust me they are a show stopper and your guests will be asking for you to make these every holiday season.
Ingredients:
- 8 whole artichokes
- 1 whole head of garlic minced
- 1/2 cup butter
- 1/4 cup panko breadcrumbs
- 1/4 cup Parmesan cheese
- 1 tsp salt
- 1 tsp pepper
Directions:
- First, prepare the artichoke by cutting each in half then remove the fuzzy middle part with a spoon and then trim off the points of the artichoke with some kitchen shears.
- Steam the artichoke halves until tender.
- In the meantime, preheat oven to 350 degrees. In a large saucepan, melt the butter. Then add in the garlic, salt, pepper and sauté for 2 minutes. Then add in the breadcrumbs.
- Transfer artichokes to a large baking dish, with the cut open side up (it will work like a boat to hold all the filling). Bake for 15-20 minutes until cheese has melted.
- Pour the butter mixture over the artichokes and then top with some grated Parmesan cheese.
- Serve warm. Bon Apetite!
