I’m always searching for new ways to make our favorite meals healthier. Today is all about Zucchini Parmesan which is usually made by coating the zucchini in an egg batter then dipping into bread crumbs and frying in oil. In this recipe, we aren’t doing any of that! Instead we are going to roast our zucchini in the oven then gentle sprinkle a little bit of bread crumbs in between layers. You save a ton of time and calories making it this way AND it’s still DELICIOUS! My littles even asked for seconds!

5. Once zucchini is all done, get a 9×9 baking diish and start the layering process. First add some marinara sauce to the bottom and then arrange your zucchini pieces to cover the bottom of the dish. Sprinkle some bread crumbs then add a layer of sauce, then cheese mixture. Keep alternating—zucchini, sauce, bread crumbs, cheese until zucchini is gone and you end with a top layer of cheese.
6. Put dish in oven and cook for 20 minutes. Bon Apeptite!
