What’s better than ice cream and cake?!? Nothing, if you ask my hubby and kiddos! For as long as I can remember my family has been making homemade ice cream cakes. They are surprising easy and fully customizable to your crowd.
This past week, I made a mint chocolate cookie sandwich cake for the hubby’s birthday. There wasn’t a drop left!!
Ingredients:
Box of ice cream sandwiches (this is your base so if you don’t like chocolate get creative)
2 gallons of your favorite 1-2 flavors of ice cream (or gelato)
Jar of hot chocolate sauce
Cookie sandwiches, crumbled for a crunch (you can use anything–sprinkles, cookies, peppermint, fruit, etc)
Whipped cream (homemade–>click HERE for recipe OR store bought)
Directions:
In a freezer safe dish, put a layer of ice cream sandwiches.
Next add a layer of your first flavor of ice cream, spread evenly.
Then add your hot fudge sauce (not heated up) & crunch layer.
Add your next flavor of ice cream.
Top with whipped cream and sprinkle with your decorations.
Place in freezer for at least 2 hours.
Remove 20 minutes before wanting to serve. Pop the bottom up after the 20 minutes then cut with a sharp knife .
