Ingredients:
- 24 oz of small potatoes
- 3 tbsp EVOO
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp garlic powder
- 1/4 cup shredded cheddar cheese
- Toppings (optional): sour cream, bacon, chives
Directions:
- Preheat oven to 400 degrees Fahrenheit
- Slice the ends of your potatoes, then slice bite sized disks about 1/2 inch thick
- In a large bowl, combine the potatoes, pepper, salt and garlic powder. Mix well.
- On a cooking sheet, line the potato slices making sure they do not touch each other.
- Bake in the oven for 25 minutes until the potatoes are tender.
- Remove from oven and add shredded cheese on top of the slices, put back in the oven on broil for about 2 mins until the cheese melts.
- Remove from oven again and top with your favorite toppings: bacon, sour cream, chives
