These days I am constantly finding and creating fast and simple recipes because let’s be honest with 2 kiddos and 2 businesses this momma is exhausted. The whole family was so excited to try this new creation because it was way outside our normal menu. This time I made it with some sticky rice but next time I think I’m going to throw it over some riced cauliflower.
Ingredients:
1 head of broccoli, cut into bit sized floret pieces
1/4 cup water
1 lb pork tenderloin
3 garlic cloves minced
1/2 cup reduced sodium soy sauce
1 tsp flour to thicken sauce
pinch of red pepper flakes
2 tbsp sesame oil
1 tbsp of black sesame seeds
Directions:
- Take a small pairing knife and remove the silver skin area on your tenderloin. Slice pork tenderloin into very thin slices. Place slices into a large gallon sized ziplock bag and add in flour, shake to coat.
- Next add the minced garlic cloves, soy sauce, red pepper flakes into the ziplock. Shake to even coat. Place in fridge for at least 20 minutes prior to cooking.
- Heat up a large skillet. Add 1 tbsp of sesame oil. Once heated, add in broccoli florets. Cook for 2 minutes then add water and cover. Steam for about 5 minutes until most of the water is evaporated.
- Next push the broccoli to the edges of the skillet, add the remaining tbsp of oil. Dump the bag of pork tenderloin with all the marinade into the pan. Cook for about 15 minutes. Serve over rice and top with black sesame seeds. Bon Appetit!
It seriously doesn’t get any easier than that!!! Dinner…DONE!
