I was introduced to Delicata Squash about 7 years ago at a Friendsgiving. I had never seen roasted squash with skin left on like this and was immediately intrigued. As soon as the squash hit my lips, I knew I would be making this simple dish for years to come.
Ingredients (serves 4):

3. Slice the squash into 1/2 inch pieces and make sure to leave the skin on.
4. Place cut pieces into a baking dish and cover with the EVOO, salt, pepper and nutmeg.
5. Roast in the oven for about 30 minutes or until soft and the skin starts to turn a bit golden. Enjoy!
