We are eating super “clean” this week since we just got back from a super fun trip and had a couple of indulgences (think cocktails, pizza, fries, my girlfriend’s homemade amazing cheesecake!). Last night’s healthy meal was a success of chicken sausage, peppers, onions and cauliflower rice.
Ingredients:
- 8 Mild Italian Chicken Sausages, sliced
- 2 Yellow Onions, sliced thin
- 3 Bell Peppers, sliced thin (I love using orange or yellow ones for the color!)
- 4 garlic cloves, minced
- 2 TBSPs EVOO
- 1 tsp salt
- 1 tsp pepper
- 1 TBSP garlic powder
- For the “RICE”–4 cups riced cauliflowers, 1/4 onion diced, 2 garlic cloves minced, 2 TBSP coconut oil, 1 cup chicken broth, 1 tsp garlic powder plus salt and pepper to taste.
Directions:
- Heat up 2 large skillets (one for peppers/onions/sausage and another for the “rice). Add 2 TBSPs of EVOO to one skillet and 2 TBSPs coconut oil to the other.
- In the EVOO skillet, once the oil is warmed, throw in all the ingredients (EASY!!) and cook for around 20 minutes until sausage is browned and veggies and soft.
- In the coconut oil skillet, once the oil is warmed, add in the onions and garlic. Cook until translucent then add the cauliflower rice and spices plus the chicken broth. Cook for about 15 minutes until the rice is soft (you may need to cook longer if you use frozen cauliflower rice like me!).
- Get a pretty bowl out, add in the rice then top with the sausage veggie mixture. Bon Appetite!
