We love #TacoTuesday around here so much but sometimes this mama needs to switch things up a bit. This past week I was wanting one of my favorite Mexican inspired meals poblano peppers which are typically stuffed and fried. As you guys know, I am always trying to find a way to make meals healthier so I decided Tuesday night taco night was turning into a healthier semi-homemade version of this dish I so love.
The peppers 🌶 🫑 —Poblanos
This dish is called for poblano pepper which have just a touch of spice to them but if you like NO spice at all grab a couple of bell peppers to stuff instead.
The SALSA & TACO SEASONING
I like to use a medium salsa and taco seasoning packet for this dish but again just like the peppers if you want NO spice then you can use a mild salsa and seasoning that is too your liking.
