It seems to be official down here in South Florida–>winter is officially over. We are already getting hot sunny days in the mid 80s which of course the kiddos are loving because that means tons of beach and pool time during the weekends. As the heat rises, the frozen margaritas are coming in hot!
Watermelon and mint make a delicious, slightly sweet margarita that is perfect for all our hot days ahead. In true Random Housewife fashion, I also tried to make this as “healthy” as possible with no added sugars (except if you want that sugar mint rim).
Watermelon–>You want to make sure you freeze the melon in a large ziplock bag to get the best frozen consistency plus then you don’t have to use as much ice!
Large Batch–>Having a party or know you will be wanting more than one glass, no problem. You can make a large batch of this by just doubling, tripling, 10x the recipe. Once you blend it you can transfer back to the freezer until serving.
