Ingredients:
- 1 1/4 cup coarsely ground cornmeal
- 3/4 cup all purpose flour
- 1/2 cup sugar, plus 1 TBSP for sprinkling
- 1 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2/3 cup whole milk
- 2/3 cup half & half
- 2 large egss
- 1/2 stick of butter melted
- 1/2 cup coconut butter, melted
- 1 tbsp butter for topping
Directions:
- Heat oven to 375 degrees and place a 9 inch cast iron skillet in it to heat it up
- Place eggs, melted butter, melted coconut oil in a bowl and whisk well. Then add the milk and half and half.
- Whisk in cornmeal, flour, sugar, salt, baking powder, and baking soda in the bowl.
- Remove the hot skillet from the one and pour in the batter.
- Place back in oven and cook for 20 minutes.
- Once cooked, spread 1 tbsp butter on the top of the cornbread and sprinkle with the 1 tbsp of sugar. Enjoy.
