Tomatoes roasted in the oven are one of my favorite dishes to munch on! Heating up tomatoes brings out a beautiful deep, sweet flavor that bring me back to a vacation the hubby and I went on to Cinque Terre, Italy. I serve this dish with a drizzle of balsamic and crispy baguette slices.
Ingredients:
- 1 pint cherry tomatoes
- 2 sprigs of thyme (stems removed)
- 1 tsp pink Himalayan salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp EVOO
- 1 baguette sliced and toasted
- 2 tbsp balsamic vinegar
Directions:
- Preheat the oven to 400 degrees Farenheit.
- In a bowl mix the tomatoes with the thyme, salt, pepper, garlic powder and EVOO.
- Dump the bowl onto a cookie sheet and cook in the oven for about 20 minutes until the tomatoes become soft and start to pop.
- Remove from oven, put in a small dish then drizzle the balsamic over the tomatoes while they are still warm.
- Serve with sliced toasted baguette pieces.
