I love an easy meal especially when I can set and forget it with my crockpot! This recipe is not only super yum and enjoyed by the whole family but it is also a healthy recipe focused around using fresh ingredients.
Ingredients:
- Pork Tenderloin (remove any silver skin)
- 1 onion, diced
- 3 garlic cloves, minced
- 2 green onions (scallions), diced
- 1/2 cup extra virgin oil olive
- 1/4 red wine vinegar
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 tsp crushed red pepper flakes
- 2 bay leaves
Directions:
- In a crockpot add the diced onion, garlic and scallions.
- Then put in the trimmed pork tenderloin(s) on top of the veggies.
- Next add the EVOO, vinegar and spices into a bowl and then pour it all over the meat.
- Cook on high for 3-4 hours or on low for 6 hours. Internal temperature (in the middle of the tenderloin) must read at least 145 degrees F.
- Remove from crockpot, slice and pour juice over the meat. Top with more diced green onions if you want.
