Love when a recipe not only comes together but it’s kiddo approved! #momwin. This Hot Honey Crunchy Chicken was a huge hit and overall a pretty simple recipe to put together. They key is to use cornflakes to get a good crunch on the chicken since this is a baked dish not fried!
A few things to note:
Chicken: Repeat after me, you will pound your chicken thin. The best way to get an evenly cooked and crunchy dish is to use a mallet to pound each chicken breast thin.
Honey: I love the slight heat (it truly is just a touch of heat because the honey it isn’t a spicy dish) of using a hot honey like Mike’s Hot Honey in this dish but obviously if you don’t like any spice at all you could just add a little normal honey.
What you need:
6 cups cornflakes
1/3 cup grated parmesan cheese
1 tsp smoked paprika
1 tsp + 1/2 tsp garlic powder
1 tsp + 1/2 tsp salt
1 tsp + 1/2 tsp pepper
2 large eggs, beaten
2-6 splashes of hot sauce (add the level of heat you like)
2 lbs of chicken breasts, pounded thin
extra virgin olive oil for drizzling
Toppings: hot honey, goat cheese and chives (slices super thin)
What to do:
Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
In a food processor add the cornflake, parmesan cheese, paprika, 1 tsp of salt, 1 tsp pepper and 1 tsp garlic powder. Pulse until you have fine crumbles and spices are well combined. If you don’t have a food processor you can throw everything into a large ziplock bag and use either a rolling pin or mallet to crush it until fine crumbles. Pour into a shallow dish.
In a small wide bowl beat the eggs and add the hot sauce.
Line your counter with plastic wrap and add the chicken breasts. Cover the chicken breasts with another sheet of plastic wrap and then pound thin using a mallet (or rolling pan or canned food item depending on what you have on hand.
Next spice the chicken with the remaining salt, pepper and garlic powder.
Dredge the chicken first through the egg mixture then the cornflakes mixture. Add to baking sheet. Then drizzle the chicken with EVOO.
Cook the chicken in the oven for 20-25 minutes until cooked thoroughly.
Remove from oven and pour yourself a glass of wine! Place the chicken breasts on serving plates, drizzle with the honey, goat cheese and chives. Enjoy friends!
