Our annual Christmas party was a success and I truly loved every single moment celebrating the season with some of our closest friends. The night was full of tons of yummy homemade food like my red wine braised short ribs (recipe HERE), homemade 4 ingredient bread (yep, that’s right it is only 4 ingredients and NO kneading!! Recipe HERE) and delicious cocktails that I named Meet Me Under the Mistletoe. And let me tell you those cocktails were such a hit so of course I have to share them with all of you. Now before you see all things I will preface this with saying this makes more than one drink so although it seems like quite a list of ingredients you can make them in large batches (except add the Prosecco before serving) and store in your fridge until you are ready to treat your guests.
Ingredients (makes 4-5):
1 cup vodka (I suggest using Ketel One)
1/2 cup fresh orange with no pulp
1/2 cup rosemary cranberry syrup (recipe below)
1/2 cup water
handful of pomegranate seeds
1 750ml bottle of your favorite prosecco
Optional: candied sprigs of rosemary, cranberries and orange slices for toppings
Directions:
In a large pitcher, stir together all the ingredients except the Prosecco. Cover and store in the refrigerator until you are ready to serve.
When ready to serve, add ice to individual glasses and pour the mixture over ice then top each with Prosecco PLUS the optional candied fruit.
Rosemary Cranberry Syrup
In a saucepan add 1 cup sugar, 1 cup water, 3 sprigs of rosemary and a handful of fresh cranberries. Stir well.
Bring to a low boil and cook for about 3-4 minutes. Make sure to stir every now and then as it cooks.
Remove from heat and let sit until cool.
Candied Rosemary and Fruits
In a saucepan add 1 cup sugar and 1 cup water and bring to low boil. Cook for 3 minutes then add in small batches the rosemary or fruit. Let it sit for about a minute then remove and immediately add to a dish of sugar and move it around to coat fully.
Add the new sparkly candied items to a piece of parchment paper to dry.
